You may have seen many versions of the “TikTok Pasta” going around… I finally decided to make it (vegan of course) and it turned out wonderfully! Super quick to prep, most of the time is spent with it cooking and roasting in the oven.

Ingredients:

  • 2 pints cherry tomatoes or any other tomatoes

  • 1/3 cup olive oil

  • 8 oz feta cheese 1 block (I used Nafsika’s feta cheese)

  • 9 oz pasta of choice (I used fusilli)

  • 2 cloves garlic crushed

  • fresh basil chopped, to finish

  • crushed red pepper (chili) flakes (as desired)

  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F. In a baking dish, toss the tomatoes with the olive oil and place the feta in the middle, turning it to coat it in oil. Season everything with salt and pepper and bake for 30 minutes.

  2. After 30 minutes, turn the heat up to 450°F and roast until the feta is golden brown 10-15 minutes. (in my case, the feta was already melted and bubbly, but I still did this step to get the tomatoes to char a bit more)

  3. While the feta is baking, cook the pasta according to the package directions. Save 1-2 cups of the pasta water, then drain well.

  4. When the feta and tomatoes are done, remove from the oven and immediately add the garlic and crushed red pepper, if using. Stir everything together until the tomatoes and feta combine into a creamy sauce.

  5. Stir in the drained pasta until well coated and creamy, adding in a bit of pasta water to loosen if too thick. Taste and season with salt and pepper. Stir in some chopped basil and finish with crushed red pepper and more basil for garnish. Enjoy!

When I seek out to make something new, I always look for the simplest recipe with the fewest ingredients. If I already happen to have most of them, even better! I found another version that had thyme and meant to add some rosemary (which I just happened to have in the fridge) and thyme sprigs in while it baked but forgot. I’ll add them in the next time I make it! I also saw another version where they added mushrooms and I will definitely be doing this next time as well because I am a mushroom fanatic!
