There were some requests for the recipe for the chocolate chip cookies that were served at the event. Here is the recipe below, from “Get it Ripe” by Jae Steele

DOUBLE TROUBLE CHOCOLATE COOKIES RECIPE

Ingredients

  • 2 1/2 cups light spelt flour

  • 1/2 cup Dutch-processed cocoa powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 (scant) cup softened non-hydrogenated coconut oil or sunflower oil (plus extra if using to coat pan)

  • 1 1/4 cups organic sugar

  • 1 ripe medium banana, mashed (about 1/3-1/2 cup)

  • 1 tsp pure vanilla extract

  • 1 1/4 cups non-dairy chocolate chunks or chips

Instructions

  1. Preheat oven to 350 degrees F. Prepare a baking sheet (or two) with a sheet of parchment or a light coating of oil.

  2. Whisk together the flour, cocoa, baking soda, and salt in a large bowl and set aside.

  3. Cream together the oil and sugar in a separate bowl, or preferably with an electric mixer, for about 1 minute. Beat in the banana and vanilla until well combined,

  4. Add wet ingredients to dry and mix just until all flour is incorporated. Fold in chocolate chunks until they are evenly dispersed throughout the dough.

  5. Roll dough into walnut-sized balls with clean hands and space them, spaced 2-in (5-cm) apart, on the baking sheet(s). Press each ball gently to flatten to 1/2-in (1-cm) thick.

  6. Bake for about 13 minutes, until crusty on top but still soft.

  7. Eat ‘em warm, or allow to cool completely on a rack before storing in an airtight container.

Makes about 30 cookies.
